The first days of autumn have a way of making us crave everything pumpkin, and these overnight oats are no exception. Stir it together in the evening, tuck it in the fridge, and wake up to a creamy, spiced chia pudding. It’s the kind of breakfast that makes a chilly fall morning feel like something to look forward to.
The base comes together with chia and hemp seeds, pumpkin puree, warm pumpkin spice, and a touch of maple syrup. Our Organic Cream-Top 2% Milk and Organic Whole Milk Plain Yogurt give it a rich, creamy texture without overpowering the pumpkin. Because our milk is low-temp vat pasteurized and non-homogenized, it keeps a fresh, clean flavor that lets simple ingredients shine. Just give the bottle a good shake first to mix the cream back in.
The topping is what makes this feel like dessert for breakfast: melted white chocolate whisked with our grass-fed yogurt into a smooth, tangy-sweet layer, finished with a dusting of cinnamon. Make a batch Sunday night, and you’ve got two mornings sorted, or share a jar with someone you love.

Tips for Making It Your Own
For extra crunch, sprinkle toasted pecans or pepitas on top just before eating. If you like a sweeter pudding, add another drizzle of maple syrup to taste. And if you’d rather go richer, swap in our Organic Cream-Top Whole Milk.
