A light and creamy pasta salad featuring our organic Kalona SuperNatural buttermilk. This simple dish combines al dente pasta with a tangy, herb-infused dressing and sweet garden peas for the perfect balance of flavors. Made with our minimally processed buttermilk from pasture-raised cows, this salad delivers pure, wholesome taste in every bite. Ready in minutes and even better after chilling, it’s an effortless side dish for any occasion.
Ingredients
8 oz pasta (elbow, cavatappi, or your choice)
1/2 cup Vegenaise (or mayo if preferred)
1/4 cup Kalona SuperNatural Organic Buttermilk
1/4 cup grated Parmesan cheese
1/2 cup peas (frozen, thawed or cooked)
1 tbsp lemon juice
1 tbsp chopped fresh parsley
1–2 garlic cloves, finely minced (adjust to your garlic love level)
1/2 tsp kosher salt
1/4 tsp dried thyme
1/4 tsp dried oregano
Pinch of cayenne pepper (optional, for a slight kick)
Instructions
1. Cook pasta according to package directions until al dente. Drain and rinse with cold water to stop the cooking. Let it cool.
2. In a large mixing bowl, whisk together:
• Vegenaise
• Buttermilk
• Parmesan
• Lemon juice
• Garlic
• Kosher salt
• Thyme
• Oregano
• Cayenne
3. Add the cooled pasta, peas, and parsley to the bowl. Toss until evenly coated.
4. Chill in the fridge for at least 30 minutes before serving to let the flavors meld.
Notes
• Add more lemon juice or buttermilk if you’d like it tangier or looser in texture.
• You can use Greek yogurt or sour cream in place of buttermilk if needed.
• To boost protein, toss in some chickpeas or diced grilled chicken.
