Make these hearty appetizers and Greek yogurt dips to make your party the one that no one leaves.
Ingredients
Meatballs
- 1 pound ground beef
- 2 large eggs
- ½ cup Kalona SuperNatural™ Greek yogurt or 1 (5-ounce) container (or make your own Greek yogurt)
- 2 cups Panko bread crumbs
- 1 tablespoon finely diced onion
- ½ teaspoon salt
- 1/8 teaspoon pepper
- 2 tablespoons olive oil
Cucumber Yogurt Dip
- 1 cup Kalona SuperNatural™ Greek yogurt or 2 (5-ounce) containers
- 1 small cucumber, peeled and finely diced (approximately 1 cup)
- ¼ teaspoons minced garlic or 2 cloves, finely diced
- 1 teaspoon dill or ½ teaspoon peppermint leaf
- Salt and pepper to taste
Sweet Curry Yogurt Dip
- 1 cup Kalona SuperNatural™ Greek yogurt or 2 (5-ounce) containers
- 2 teaspoons curry seasoning
- 2 tablespoons maple syrup
- Salt and pepper to taste
Instructions
Meatball Directions
In a large mixing bowl, fold the ground beef, yogurt and eggs together. Add in 1 ½ cups of the bread crumbs, reserving ½ cup for later. Add onion, salt and pepper. Knead ingredients together until completely blended. Preheat oven to 350F. Form mix into 1 to 1 ½ inch diameter meatballs. In a large sauté pan, heat olive oil on medium high heat. Brown meatballs on all sides, approximately 2 to 3 minutes. Using tongs rolls each meatball in the ½ cup reserved bread crumbs. Place on ungreased cookie sheet. Bake in over 15 to 20 minutes. Serve warm with Cucumber or Sweet Curry Dip.
Makes approximately one dozen. Double the recipe for a larger party.
Cucumber Yogurt Dip Directions
Blend all ingredients together and serve as dip with meatballs, pita chips or crackers.
