This delicious and nutritious snack combines oats, puffed rice, almonds, and freeze-dried strawberries with a naturally sweetened peanut butter-honey base. A creamy yogurt coating adds a tangy touch, while a drizzle of white chocolate and extra berries make them even more irresistible. Perfect for a grab-and-go treat, these bars are easy to make and best stored in the freezer for a refreshing bite anytime!


Ingredients

½ cup honey

½ cup natural peanut butter

2 teaspoon vanilla extract

2 cups oats

1.5 cups puffed rice cereal

¼ cup unsweetened shredded coconut

¼ teaspoon salt

½ teaspoon cinnamon

¼ cup almonds chopped

¼ cup freeze dried strawberries crushed

Yogurt coating:

¼ cup Kalona SuperNatural Honey Organic Yogurt

2 tablespoons light cream cheese softened

1 tablespoon powdered sugar

1 tablespoon Kalona SuperNatural Whole Milk or 2% to thin


Instructions

  1. In a microwave-safe bowl, mix honey and peanut butter. Microwave for 30 seconds until the peanut butter softens and becomes runny. Stir in the vanilla extract and whisk until smooth.
  2. In a large mixing bowl, combine oats, puffed rice cereal, shredded coconut, salt, cinnamon, almonds, and freeze-dried strawberries.
  3. Pour the peanut butter-honey mixture over the dry ingredients and stir until well combined. Using your hands may help ensure everything is evenly mixed.
  4. Transfer the mixture to an 8-inch square pan lined with parchment paper, pressing it firmly to help the bars hold their shape. Freeze for at least 2 hours.
  5. Once frozen, carefully slice into 16 granola bars.
  6. To prepare the yogurt coating, whisk together honey yogurt, softened cream cheese, powdered sugar, and milk until smooth.
  7. Dip the tops of the granola bars into the yogurt mixture, then place them on a parchment-lined baking sheet. Sprinkle with extra freeze-dried strawberries.
  8. Store in the freezer. Enjoy!
