Eggnog Pancakes

Mix all ingredients together except for the egg whites.  In a separate bowl, beat the egg whites until medium stiff peaks develop. Carefully fold beaten egg whites into batter.

Drop spoonfuls of batter onto a medium hot griddle or fry pan (do not grease the griddle or pan).  Flip when bubbles develop around the edges and cook a short while longer. These cook quickly.


Serve with a bit of butter, a dusting of powdered sugar, a dash of nutmeg or whatever you prefer!
