Birchwood Cafe Radish Butter

This versatile radish butter spread is courtesy of Chef Marshall Paulsen at Birchwood Cafe.

Radish Butter Ingredients

  • ½ pound Kalona SuperNatural™ organic butter, softened at room temperature
  • ½ shallot, finely minced
  • Zest & juice of 1 lime
  • ½ cup chives, minced
  • 8 cherry radishes, trimmed & brunoise
  • Pinch of kosher sea salt

Directions

In a mixing bowl, fold all of the ingredients together with a rubber spatula.

Serve atop sliced baguette, toasted multigrain, grilled steak, baked fish, scrambled eggs, roasted asparagus, mashed potatoes, or anything and everything else you enjoy with a delicious, colorful, springy butter!
