Carrot Muffins with Kalona Plain Yogurt

Description

These Carrot Muffins are made with no Refined Sugar and are toddler approved! 🥕🙌🏼 


Ingredients

1 1/2 cups all-purpose flour

1 teaspoon baking soda

1 teaspoon baking powder

1/2 teaspoon salt

1 teaspoon ground cinnamon

1/2 teaspoon ground nutmeg

2 large eggs

1/2 cup whole fat yogurt

1/2 cup pure maple syrup or honey

1/4 cup melted coconut oil

1 teaspoon vanilla extract

1 1/2 cups grated carrots (about 3 medium carrots)


Instructions

1. Preheat your oven to 350°F (175°C). Line a 12-cup muffin tin with paper liners or grease the cups with a little oil.

2. In a large bowl, whisk together the all-purpose flour, baking soda, baking powder, salt, cinnamon and nutmeg.

3. In another bowl, beat the eggs, then add the yogurt, maple syrup (or honey), melted coconut oil, and vanilla extract. Mix well.

4. Pour the wet ingredients into the dry ingredients and stir until just combined.

5. Fold in the grated carrots, and if using, the chopped nuts and raisins. (If using)

6. Divide the batter evenly among the 12 muffin cups.

7. Bake for 18-20minutes, or until a toothpick inserted into the center of a muffin comes out clean.

8. Allow the muffins to cool in the tin for about 5 minutes, serve and enjoy!
