These gluten-free chocolate chip muffins are packed with probiotics from kefir and are great for a gluten-free diet. Ingredients

- 2 cups organic gluten-free flour
- 1 Tbsp baking powder
- 1/2 tsp salt
- 3/4 cup organic sugar
- 3/4 cup Kalona SuperNatural Organic 100% Grass-fed Plain Kefir
- 1/4 cup organic coconut oil, melted
- 2 Large organic eggs
- 2 tsp organic vanilla extract
- 1/3 cup organic mini chocolate chips
- 1 Tbsp raw organic cane sugar
Instructions
- In a medium bowl, combine the flour, baking powder, and salt. Set aside.
- In a large bowl, combine all other ingredients except for the chocolate chips.
- Add the dry ingredients into the wet and mix until moistened. The batter should have small lumps.
- Gently fold in the chocolate chips. The final batter will seem thin.
- Cover and refrigerate for 1 hour.
- Once chilled, preheat the oven to 450 degrees and spray a muffin pan with cooking spray.
- Scoop the batter into the pan filling each cup 2/3 full. Sprinkle with the remaining cane sugar.
- Bake for 5 minutes. Reduce the temperature to 375 and cook an additional 15-17 minutes.
- Transfer to a cooling rack and cool completely.
