Ingredients
- 1 cup soaked & chopped dates
- 2 Tbsp chopped pecans
- 1 cup old-fashioned oats
- 3/4 cup whole wheat flour
- 1 cup raw sugar (split in two)
- 1/2 tsp baking soda
- 1 stick Kalona SuperNatural Organic Lightly Salted Butter, softened
- 2 organic egg yolks, beaten
- 1 1/2 Tbsp cornstarch
- 1 cup Kalona SuperNatural Organic 100% Grass-Fed Whole Milk Plain Kefir (can also use whole milk yogurt or sour cream)

How-To-Make Pecan Date Bars
- Soak the dates in a bowl of hot water.
- Preheat oven to 350 and butter an 8×8” baking dish.
- Mix the oats, flour, 1/2 cup of the raw sugar, and baking soda. With hands, mix in softened butter until evenly distributed in oat mixture. Set 3/4 cup of the mixture aside. Press the remaining mixture into the bottom of your baking pan and bake for 10 minutes.
- In a medium saucepan mix the yolks, 1/2 cup of raw sugar, cornstarch, and kefir. Heat on medium-low, stirring occasionally, until thickened. When thick, remove from heat. Stir in dates and pecans.
- Once the crust is done, remove from the oven and top with the kefir filling. Spread it evenly and bake for an additional 10 minutes.
- Take the bars out and crumble the remaining oat mixture evenly over the bars. Bake for an additional 10-15 minutes, until the top is golden brown.
- Wait until cool to cut them.
