This Pumpkin Cottage Cheese Pudding is the perfect balance of creamy, cozy, and indulgent—all while packing in those healthy macros! With the richness of cottage cheese combined with the warmth of pumpkin and spices, it’s a dessert that’ll satisfy your cravings without derailing your goals.
Ingredients:
- 6 oz Kalona SuperNatural Organic Cottage Cheese
- 3 tbsp pumpkin purée
- 1 egg
- 2-3 tbsp powdered sugar (or sweetener of choice)
- 1 tsp pumpkin pie spice
- Dash of vanilla
- Whipped cream (optional, for topping)
Instructions:
- Preheat the oven to 350ºF (175ºC). Get it nice and warm while you prep this deliciousness!
- In a blender or food processor, combine the cottage cheese, pumpkin purée, egg, powdered sugar (or sweetener of choice), pumpkin pie spice, and vanilla. Blend until smooth and creamy. You want a consistency that’s velvety, with no lumps of cottage cheese.
