Shrimp and Asparagus Alfredo

Shrimp and Asparagus Alfredo

Ingredients

Directions

  1. Melt 2 tbsp butter in large skillet over medium heat. Add shrimp until the underside is opaque (about 2-3 minutes).
  2. Flip the shrimp and add asparagus. Season to taste with salt and pepper. Cover and cook for 3-4 minutes or until asparagus is tender-crisp and the shrimp is cooked through.
  3. Drain any liquid and remove shrimp and asparagus to plate.
  4. Melt the 1/2 cup butter in the same skillet over low-medium heat.
  5. Add garlic and cook for 2 minutes.
  6. Pour in the cream and bring to a simmer. Simmer for 2 minutes.
  7. Stir in parmesan and cook until thickened, about 3-6 minutes. Season to taste if needed.
  8. Add the shrimp and asparagus back to the skillet and stir.
  9. Serve over low-carb noodles with bacon sprinkled on top with extra parmesan on top.
