Gluten-Free Chocolate Chip Muffins

Ingredients

  • 2 cups organic gluten-free flour
  • 1 Tbsp baking powder
  • 1/2 tsp salt
  • 3/4 cup organic sugar
  • 3/4 cup Kalona SuperNatural Organic 100% Grass-fed Plain Kefir
  • 1/4 cup organic coconut oil, melted
  • 2 large organic eggs
  • 2 tsp organic vanilla extract
  • 1/3 cup organic mini chocolate chips
  • 1 Tbsp raw organic cane sugar

Directions

  1. In a medium bowl, combine the flour, baking powder, and salt. Set aside.
  2. In a large bowl, combine all other ingredients except for the chocolate chips.
  3. Add the dry ingredients into the wet and mix until moistened. The batter should have small lumps.
  4. Gently fold in the chocolate chips. The final batter will seem thin.
  5. Cover and refrigerate for 1 hour.
  6. Once chilled, preheat the oven to 450 degrees and spray a muffin pan with cooking spray.
  7. Scoop the batter into the pan filling each cup 2/3 full. Sprinkle with the remaining cane sugar.
  8. Bake for 5 minutes. Reduce the temperature to 375 and cook an additional 15-17 minutes.
  9. Transfer to a cooling rack and cool completely.
