Ingredients
- 1 cup Kalona SuperNatural Organic 100% Grass-fed Whole Milk Plain Kefir
- 1/3 cup organic pumpkin puree
- 1 cup old-fashioned rolled oats
- 2 Tbsp chopped pecans
- 1 1/2 Tbsp pure maple syrup
- 1 Tbsp flax meal or chia seeds (or 1/2 Tbsp each)
- 1/2 tsp pure vanilla extract
- 1 tsp pumpkin pie spice
- Optional toppings:
- Homemade whipped cream
- Chopped pecans
- Pumpkin pie spice
- Maple syrup
Pumpkin Pie Overnight Oats
- In a mixing bowl, whisk together all the ingredients except for the toppings.
- Divide the mixture into three jars or containers.
- Seal and refrigerate overnight or at least 4 hours.
- Add toppings before eating. Enjoy!
